The "mutiny" is in the context of the Pope's desires, i.e. a mutiny against a person who had no actual role in the crusades other than as a spiritual leader.
The actual military leaders of the 4th Crusade were the ones who came up with the plan to divide up Byzantium between themselves and Venice. Therefore, the crusaders were not "deserters" at all, or even mutineers (unless you somehow consider the Pope to be the real leader of the Crusades in a political and/or military sense). The entirety of the crusader army participated in the sacking of Constantinople.
