if you mean the white armor, thats called a linothorax, basically thick cloth armor that cavalry would wear because it gave them really great mobility.
if you mean the red star things painted on the pauldrons, that was just a common pattern on carthaginian armor and shields.

The gambeson will do well I agree with you, but I still feel the mail itself will not be able to tolerate how much energy is focused on the point during a stabbing motion.
As I understand it. Ring mail was designed to decrease the likelihood that you would loose a limb. It cannot protect you well from piercing attacks mabey with the exception of a one handed broad tipped sword. It may stop that. Mainly however. Chain mail kept your arms on your torso and it took slashing damage of a sword and made the damage done relate more closely to a baseball bat.

To be fair, mail was just one part of a system. If it manages to slow a piercing attack enough that a gambeson can take care of the rest then it has done its job as intended.
A point that matt makes from time to time is that attacks are often misrepresented in 'cutting demonstrations' or tests. You have cold steel releasing videos of people swinging with the entirety of their body, in ways that would leave them horribly open to attack.
I predict that mail will make people absolutely impervious to 'normal' attacks that come mainly from the wrist and arms, and require attacks that incorporate the torso as well

Ring mail in the chainmail sense doesn't exist, it's all chainmail. Ring mail in reality was essentially leather with some metal rings sewn into it, generally only covering the chest due to shit flexibility if you wanted to actually protect a joint.
