Which branch should I join?
I'm in my early 30s with a shitty degree. I don't want to look back on my life and say I should have served my country.

If you want to be in the infantry join the Army/Marine Corps, if you want to be a sailor join the Navy as a QM/BM/GM. Pretty much no reason to join the AF as an enlisted person if you actually want to do classical war-related things.

Cut off date to be a pilot in the ADF is 27. They actually prefer recruiting people to be pilots as young as possible. Something about 18 year olds having less of a sense of self preservation so their easier to train to fly hornets.

I'll add for pretty much any other role being in your mid 20s or slightly older is probably a bit of an advantage. DFR like people with life experience who are looking to make a career out of the mil not just wanting to fuck about for a couple years after finishing HS.

I specifically added my last sentence because I know exactly how it is with those annoying speeches. I'm not saying it from a sentimental way, nor am I suggesting you re-enlist: you will miss lots of it and you will never say 'I wish I never did that'. I mean it in a realistic way, I'm not a failure and I don't wear USMC gear all over or anything like that. Thats bullshit. Even if you joined at 18 you wouldnt be in the hornet seat until you were 20. Most pilots going through OASB are 20+ when they join. The only 18 year olds are ex 1st XV/head boy types who were groomed for this shit
