Are there any major differences between modern dual stack 9x19mm semi auto pistols or does it come down to personal choice? There's a huge range of prices and I don't see an equivalent range in functional differences.
What qualifies as a major difference to you
A few.
Slide or frame mounted safeties.
Trigger types (SAO, DA/SA, DAO, "Safe action" and whatnot).
Magazine release type.
Type of operation (Mostly short recoil, but there are some notable exceptions).
Other than that, I guess it comes down to stuff like how good the aftermarket is, if you need it to be lefty-friendly or what.

Basically no. Unless you're talking about minor things like DA/SA, striker fired, polymer, aluminum, etc. Functionally the vast majority of pistols out there are good to go.

Major differences. There's single action, double action, DA/SA, striker fired, steel frame, polymer frame, alloy frame, and any manner of other things. Polymer framed striker fired pistols are the current trend.

The Steyr GB or H&K P7 both use gas delayed blowback, for instance.
There are also guns like the Beretta PX4 Storm that, while still short-recoil, use a rotating barrel instead of a tilting barrel (which is the norm by far).

"Alloy" just means it's a metal that has more than one element in it. Each alloy has it's own specification based on the exact composition and the quantity of each element in it. All steels are alloys. You'd also never use pure aluminum for anything other than maybe its electrical properties. It's always going to be an alloy.

Well, there are a lot of "pistols" out there that are gas operated... But in terms of designs built from the ground-up to be pistols? Not really.
There are also a few companies that made straight-blowback 9x19's, though they are either xbox huge (hi-point) or their springs are too stiff for many to chamber a round.
