Just keep in mind that not all 10xx steels are high carbon. 1070 might be. 1080 and 1095 are. Lower numbers ain't.

I have an S30V spyderco Sage 1, and it holds an edge VERY well, much better than other steels I have, BUT... Is it hard to sharpen.. I'm not even talking about time, it's just weird, I can get a pretty good edge on it but can't get it to be really fine, just a coarse aggresive edge. If I try to polish it it becomes duller, and with other knives I have I can polish it to almost mirror edge and it gets crazy sharp ( they're mostly 8cr13mov, AUS8, and a couple carbon steel / probably 1070)
