Spartan hoplites were better armoured and very discipline with staying in position and doing drills in their phalanx. Not much is known about Viking infantry tactics besides for being known synonymously as being skirmishers and disorganize in battle.
If they were both the same in total number of fighters, the Spartans would form a defence or look for ways to allure the Vikings in a enclosed area and attack and win. The only way Vikings would win if either heavily outnumber the Spartans and stay persistent in attacking them, or if they constantly bombard the Spartans with ranged weapons in an open vast destitute plain, that is void of any buildings or resources to make structures, for a long length of time and eventually kill a lot of their officers (that is, assuming neither side is allowed to employ auxiliaries for their main infantry, such as the Spartans being allowed to have mercenary peltast, archers, or cavalry to counter the skirmisher Vikings) that the Spartans either break rank and flee and eventually get killed, or slowly get killed one by one.
But in a realistic scenario, the Spartans -- even if they're restricted with only hoplites -- would build a rudimentary fort or find some other point of defence -- rather natural or crafted -- to entice the Vikings in, and slaughter them.

Their shield walls weren't as discipline or formative as Greek phalanxes, which the Spartans had the best, most armoured, experienced and sophisticated phalanxes of all the Greek city-states for the longest time. Their whole military and training was almost entirely focused and specialised on making disciplined hoplites, who almost always fought in phalanx formation, and having them being the key central component of the military while employing mercenaries (or sometimes, using their helots) for the other auxiliary roles. The Athenians were known for having the best Navy of all the city-states in Classical Greece, Cretans were known for their archers, Thessalonians were known for their cavalrymen, Acarnanians were known for their slingers, and the Spartans for their hoplites. Alll of which had more experience facing real empires and not raiding rural lands than Vikings.

For the Vikings in this scenario getting beat by the Spartans would mean their overpopulated land would fill up and die out.
For the Spartans, losing would mean living in servitude under Northman rule. Not only that the Greek city states spine would break.

Let's assume by "Vikings" we mean their fighting infantry of Northmen.

You realize these are huge fucking places right? Both "terrains" have hills, plains, swamps, forests, and mountains.

What do you mean by "Viking"?. Do you mean a peasent who farms some patch of mountain side ten months of the year and goes to raid unarmed monks the other two. Or do you mean the huscarls of the byzantine guard. Vikings were not one people from one specific time period. Probably neither were the spartans but I know much less about them.
