MP5 is a submachine gun. It is made by H&K. An AR is an assault rifle. It has different guts. Ammunition type is only one of many possible differences between guns. You would also need to do a lot more than switch out the chamber. the 5.56 is a much larger cartridge. You would need to do a massive amount of work to the innards of the gun. Quite frankly I suspect if you told a gunsmith you wanted that done he'd laugh then die spontaneously of a heart attack. It makes no sense. Your entire post makes no sense.
AR is not an acceptable acronym for assault rifle you mong. Everybody will think you're referring to The AR 15. To answer your question though, a select fire roller delayed blowback rifle chambered in an intermediate cartridge, regardless of any previous designation it might have had prior to being chambered for an intermediate cartridge, would most definitely be an assault rifle.
