Silent hunter 1 and 4. Aces of the deep (or command aces of the deep if you can run it, regular works in dosbox). 1914 shells of fury (only ww1 subsim), 688i. Just check the review section on subsim.com

At any rate - check out 1914 Shells of Fury - not as polished as other sims, but certainly unique in that it's WWI, rather tha WWII.
