I recently got a Martini Henry and after cleaning it thoroughly with soapy water I noticed a few weeks later it had rust in the bore. What can I use to coat the bore to prevent this?

Have you never used BP before? It's different from smokeless. Soapy water cuts through it like a hot knife through butter.

Run a patch covered in crisco or something down the barrel to oil it. Just absolutely do not use regular gun oil unless you want your regular black powder fouling to turn into something closer to tar, seriously if you don't believe me look it up.

Crisco now is not that great of an idea. Since they went vegetable based it's more acidic.
Thompson pine scented bore butter is what I use in mine.

Seconding Ballistol, a good alternative is a product called "Fluid Film" (though it smells a bit, being made from lanolin).

Boiling water as a rinse, then drying and applying the Ballistol while the steel is still hot has worked the best for me.
