By far, Red Tails is the most accurate representation of aerial warfare in the Second World War. Using their superior P-151 fighter jets, the Tuskegee airmen trounced the inferior ME-109s, as in real life. The ACMs were clearly well researched and well portrayed with striking accuracy.

Fighter pilot: Operation Red Flag
Overall, it wasn't very good. But the flying scenes were pretty cool. Unfortunately, it's got some gay narration, and everything is staged.
Even the slow-mo gun run, and bomb run were staged too.

If you're down for an anime, Battle Fairy Yukikaze is pretty kickin'. The cockpit noises and radio chatter were all recorded in Japanese F-15s. The ACM isn't as dodgy as you'd expect, either. Also the titular battle fairy is just an AI on board a plane, there's no mahou shoujo stuff here.
