personally Id get a Wusthof Wide Chefs knife in a length of your choosing. Will literally last you and your kids lifetime easy. And if the handle breaks, just send it in and they will send you a new knife. Some people are known to buy used ones with broken handle and then send it in for its lifetime warranty.
Benchmades and spydercos may be good carry knives, but they dont know jack when it comes to kitchen cutlery.
