If you had to choose the gameplay and mechanics of one game, with the characters and setting of Touhou, which game would it be and why?
Ever since Eyes of Heaven came out I've been playing it a lot, and all I can think about is it in 2hu form.
Ace Combat: the Gensokyo-Lunar War, complete with the melodramatic storyline and the superweapons.You start off as some no name human pilot in their outsider-contractor force and fight in the war, gaining wingman options with Touhous and their spellcards as special weapons.

Spent a lot of time making (shit) doodles of what I think 2hu would look like as giant monsters abstracted from their concepts, like a geometric ice-crystal monster Cirno or a giant doll with an army of little poppets Alice. Then you kill them and take their souls and make cool weapons and stuff.

Touhou Metal Slug
Reimu, Marisa, Sanae, Sakuya, Youmu, Reisen as playable characters. Every other character gets captured and they become the POWs of the missions. Nitori is an NPC who creates the vehicles for you.
I dunno who the villains would be. Maybe the Lunarian scum.

Anything with exploration. I'd love something in first or third-person where you're on foot exploring Gensokyo. It could be a game like Zelda or even a game like the Elder Scrolls.
Read books in Patchy's library to find the information you need to know to defeat some enemy somewhere; jump into the lake to get help from Waggysaggy; climb the Youkai Mountain to receive a blessing at the Moriya Shrine...
You could be either one of the Touhous or maybe even the story could be centered on some nameless person from the human village.
For me a grand strategy, I want to pick a faction and take over Gensokyo.

There's a history of supernatural-themed sports games, including those from Western developers. Unfortunately, modern sports games lack imagination and innovation, but that's something shared in much of the industry I suppose. The Mutant League games on Sega Genesis are another great (and hilarious) example.
Touhou would fit into most, if not all, sports I think.
A proper oldschool shooter, think of quake/doom, I know of some of the touhou WAD's out there but I think it could be better and more indepth.

This would be kind of interesting. I mean you already have a world where a bunch of youkai are running around.
I'd guess the shrine maidens would be the main characters, along with Yorihime maybe. Possibly Kosuzu and Usami too. You'd fight and fuse and summon the youkai/ghosts/goddesses.
I'm imagining it more in the Persona 1 and 2 sense though. Aspects of the later ones are okay, like the sim aspect but the first ones had a better atmosphere and feeling. Persona 2 is kind of like Gensokyo too with the rumors changing reality plot.
