I think the general structure is ok (as for me, every time amazed) but can anyone verify?
I am pretty sure the "私は" is correct, and the placement of "見ます" at the end of the sentence as the sentence ender.
I however have never used "毎回" so i dont know how to position it, and what particles to use, i am inclined to say に to indicate a time.
I would not know what comes after the "びっくり", if anything at all...

What you want to use is called a "relative clause".

You are actually trying to write a sentence describing an action about another action. This is achieved in both Japanese and in English by embedding one clause within a larger sentence.

"Every time I see it, I am surprised."

"I see it" is a sentence on its own. That's covered sufficiently by 見る, which, in Japanese also, can be a sentence on its own.

The rest of the sentence modifies this relative clause, and note that it could do so regardless of the content of that clause; the larger sentence is, "Every time _, I am surprised." Effectively this should be "_"たびにびっくりします (or any of the alternatives, including with 驚きます), where in "_" is some independently valid clause (ending with a verb).

As you will note, 驚きます is not します; します is just how to make a verb of びっくり.

When you walk into a supermarket in Sweden you enter a lobby sort to say, there you have some other things perhaps like the postal service or something, but once you enter the actual store part where all the wares are a gate closes behind you and you cant get out and the only way to get out of the store is to go through where you pay

Informally, sure. The usual advice for learners is to use ませ/です, because if you speak too casually to the wrong person it will be rude.

Generally speaking, the relative clause will use the plain form, regardless of how polite or formal the rest of the sentence is (although there are sometimes exceptions). You can set the tone with the final verb (and choice of vocabulary). Depending on what you will use the sentence for (written or spoken; audience; etc.) it could be okay to use びっくりする or 驚く.

Similar to the above, びっくりする is a bit more informal or conversational. The meanings are basically the same.
