After the collapse of the roman empire long after greek had already been adopted as their lingua franca the various previous territories all became isolated and in the italians case intermingled with other peoples (lombards, etc.) and the language become corrupted and sort of evolved into its own thing, known as italian.
On a lexical level, Italian, sardician and romanian are the closest to actual latin, while french and spanish are still pretty similar but far more corrupted.

First of all, Latin was and remained the European lingua franca and the priestly and the scholars' language.
Secondly, there always was a collection of "vulgar" languages that the commoners (and not only the commoners) spoke and wrote in, that retroactively were called dialects.
Dante Alighieri is credited with being the father of the Italian language, the fun starts with his De Vulgari Eloquentia, written between 1303 and 1305, the target audience being the intellectuals of his time, convincing them that there is poetic merit to be found in the vulgar language, and in particular the author was questing for a language that was illustrious, "pivotal", and worthy of being spoken @ a king's court, in a tribunal.
Of course his Divine Comedy showed it was possible.
The debate on whether the language of all the Italians should be a new "artificial Italian", or the Tuscanian language according to Florence, which Dante himself used, went on for centuries, with Alessandro Manzoni, one of those "tuscanists", arguing in 1868 that Dante didn't mean to propose a new language.

Anyways, Dante already argued that the Tuscan dialect was the more suited as common language for the Italian people for a variety of reasons, but if I'm not mistaken his De Vulgari Eloquentia was lost by the XVIth century.
