I come across these accusations quite a bit but it seems like a lot of them are medieval or WN propaganda.

This. Jews collaborated with the muslims during the conquest of Iberia. That was one of the main reasons Jews were later expelled from Spain (and moved to the Ottoman empire). In general Jews were treated much better under Muslim rule. They had to pay the jizzya of course like all non Muslims but other than that they were tolerated and were allowed to dominate many niches and become rich. In Christian Europe on the other hand they were persecuted and pogromed all the time.
