All of them are exaggerated for dramatic effect, obviously, but the ones mentioned that are at least semi-grounded in history and don't really have any magic/fantasy are Ravages, Vinland Saga, Kingdom, and Adolf. Some have fairly realistic historical settings like Otoyomegatari. Junketsu no Maria and Koihime Musou are historical settings mixed with fantasy, magic in the former and gender bending/time travel in the latter.
If you want historical material you should really stick to manga over anime, honestly.

Vinland Saga
When it's not depicting a fight, it's surprisingly historically accurate. Not perfectly so, but leagues ahead of any other "viking" comic or show I've seen. One particular thing it sets down from the beginning is that the vikings were not one big nation or group pillaging Europe, immediately showing the "in-fighting" amongst various bands and countries.
When it does get fantastical, it draws from actual Norse lore and sagas about warriors that might have existed, one of which being Thorkell the Tall.

Thorfinn, son of a Jomsviking named Thors who faked his own death to live life as a pacifist, is out for revenge against Askeladd, leader of the mercenary band who assassinated him. Thorfinn joins Askeladd's band and regularly fights in battles and raids so that he can be rewarded in one-on-one fights against Askeladd himself in hopes that he can kill him honourably.
The first major arch of the series is set during King Swyen's invasion of England (early 11th century) and has the mercenary band embroiled in the pollitics surrounding the succession of the throne.
Without spoiling it, the story continues past where most revenge stories would end. The whole series explores the concept of pacifism, with a particularly war-hardened culture behind it. The second big arch is much slower though and moves from a battlefield to a farm, which throws a lot of people. It's current arch picks up the pace.
It's fucking gorgeous, the writing is reflective and outright poetic, and it's great at putting you in the shoes of the time period.
Galaxy Express 999 is both old enough to be considered history and deals with a lot of social issues.

OP have you seen the movie "Flesh + Blood?" It was directed by Paul Verhoeven before he became huge in America for making Robocop and Total Recall and was almost certainly a big inspiration for Berserk. It's got Rutger Hauer in it and does a very good job of portraying medieval life and warfare.

Barefoot Gen and The Eternal Zero are two different mangas that depict WW2 Japan. I love how there's no "good side" on the former, and its message is to show the consequences of war. It also had to deal with censorship and whatnot, so it's pretty interesting overall.
