How many citizens' assemblys and councils were there aside from the Senate? I remember patrician families had their own gathering, plebs had popular assemblys led by the tribune, but were there any more, and were they important after the Republic really kicked off?

The tribes actually included lands outside of Rome. What would typically happen is that politicians would force an election during harvesting season or delay the election by a week or two. The majority of a tribe's population would be plebs from the country side. The plebs would either be unable to attended the election or they could only visit for a few days because any day spent not on the field was a significant loss in income. A delay in election would result in the majority of the plebs leaving the city before the election resume.
So the only people who could consistently vote were the Senators and Equestrians. This would result in many tribal votes being decided by a small minority instead of the majority.
It was a constant political battle of mobilizing the plebs to swing tribal votes and attempts to delay the election to prevent this.
The democratic gatherings were essentially useless or ceased to exist. Consuls were selected by the Emperors, the Emperor gained the Tribunician power which used to be long to the plebs, and the Senate was subservient to final decision of the Emperor. The last avenue for the plebs to voice their opinion during the empire was crowd chants during games attended by the emperor.

The Volsci. The Etruscans. The Latin League. Italy. Pyrrhus and the Greeks. Carthage and the Phoenicians. 750,000 Germans streaming over the Alps. Numidia. The Gauls. The Egyptians. The Judeans. Mesopotamia. The British Tribes. Numantia. Dacia. Even some of Germania.
The Romans slowly but surely took down the largest empires of the day, all while leaving relative stability and civilization in their wake.
All of this, starting from a small city located on several hills. All of this over the period of 500 years.
Not only this, but they unified most of these areas, Latinized them, stabilized them, and ultimately profited from their taxes and fighting-age men.
It is an insult to compare the Romans to the feeble Byzantines.

The Han Dynasty in it's peak encountering the Roman Empire around AD 100, when both of these empires were peaked.
