Where does it come from

People who are fasting often argue that this is good for you but obviously back then where these (rather arbitrary) rules were made no one could have known of that

back in the old days, we did not have many health regulations, so to avoid widespread disease, religions made laws about what to eat. Pigs, in ancient times, had parasites that would infect people.

those were the main reasons religion was around, for laws and government. all the stuff about heaven and hell is just to make people obey it.

All those OT dietary laws talk about how you shouldn't mix with the Caananites, and we do have pig bones in old Caananite archeological digs.

Ritual was a way to preserve one's culture in a sea of other cultures, especially when you didn't like other cultures but otherwise had to put up with their existence. In areas with a lack of hard geographical borders and lots of human migration and trade, like the Middle East for example, it became important for a people to set themselves apart clearly or else risk blurring the lines between themselves and others.

You and your people have a god or a pantheon of gods. This religion is unique to you, but just upstream there's another town or tribe who worship a different god, and may even speak a different language, have different ancestral invaders than you, and may even have different trades and livelihoods than your own. And every day their merchants and tradesmen come down to your town for business and work because there's no mountain range or forest to isolate you from them as they bring their odd ways to your people. But you are your own people, and of course you are blessed by your god, who likes you just the way you are. So all the things you do you do in service and deference to this god, making them good and holy and worth keeping pure from contamination from the ways of other people and other gods.

It was only the nobles who would suffer problems with overeating or eating too much meat and fats.

The average pleb was pretty much half-starved anyway, fasting is retarded with the level of extreme poverty that people experienced when these religions grew popular.
