The distinction between essence (what a thing is) and existence in creatures was very import, and lead to a clash between the Thomist's and the Scottists since Duns Scotus didn't buy that you could take about what a thing was apart from it existing.

No. Aquinas was most influenced by Aristotle's treatment in the metaphysics, which happens to be pretty scattered.

Kind of, but really roughly imo. Essence is the "what it is to be" of a thing. Plato answers the question of "what it is to be x" with Platonic forms. Aristotle does it with essences, which are a bit more of a complicated notion. For Plato concrete things just "imitate" the forms, and it is those forms which are real. Essences are aspects of real concrete things on one hand, while transcending them on the other in a different way. Aquinas was mainly running off the idea that to know what a certain thing is is not to know that it actually exists or not. I can know exactly what a Chimera is, without knowing if one really exists somewhere in the universe or not.
