Please educate me on the Duchy of Brittany, how come they managed to remain independent from Charlemagne's Empire?

Also it was christian and relatively irrelevant so not really a prioritary target.

Not really. Bretons were from Britain (mostly what's Wales nowadays) who saw the Saxons coming, and went "Nope, let's get the fuck out" and migrated to Armorica. At that time they were just moving from a roman province to another. Then the Roman Empire crumbled and the Bretons decided it would be nice if they just took over the place.
They formed a few petty kingdoms, and when Charlemagne came in, either:
The place wasn't worth to invade
They paid some tributes
Or they kicked the Franks' asses (those idiots kept invading through the same swamps for some reason). They eventually kicked enough ass to be acknowledge as a kingdom.
They even manadged to get allied with some Viking bands time to time to screw over the king of Western Francia and grab some land. Until the Normans settled in Normandy and they got screwed too.
At some point the kingdom was relegated as a duchy for some reason.
