Wouldn't chiseling be older then writing since stone tablets are some of the oldest records of history.

Stone tablets are mostly decorative/designed for durability when they're actually chiseled. More often than not they're painted on (see Egyptian hieroglyphics)
What you might be thinking of is cuneiform, which was pressed into soft clay and then baked; it supersedes chiseling into bricks by a couple hundred years

I've always wondered if the right handed/left handed scale is shifted in right to left scripts. Do teachers make you write with the left hand?
