Stone tablets are mostly decorative/designed for durability when they're actually chiseled. More often than not they're painted on (see Egyptian hieroglyphics)

What you might be thinking of is cuneiform, which was pressed into soft clay and then baked; it supersedes chiseling into bricks by a couple hundred years

I've always wondered if the right handed/left handed scale is shifted in right to left scripts. Do teachers make you write with the left hand?

Pick a hand from history that looks attractive and feasible, and write in that. Pic related: love chancery cursive so it's what I practice towards as an ideal.
