The field of graphic design is so diverse and because of the high degree of subjective/personal opinion a single designer will never be well received by everyone (eg apple logo, nike logo, coca-cola logo, all well known and recognised nearly everywhere in the world, but still some people hate it whilst others think they are perfect)
Herbert Bayer of the Bauhaus, or the Bauhaus as a group. The modern style they developed in the 1920's still echoes throughout the world.

The influence of Gutenberg on technical level is obviously huge but is influence on graphic design is inexistant. He actually didn’t do a lot of graphic design since he just tried to copy what handwritten book looked like at the time

You’re pointing out another problem with, for example, Barabra Kruger, who is more of an artist than a graphic designer. The fact is that graphic design is still a child compare to art or other area of design. Modernism is a movement born in architechture. The first visual indentity was created by an architect. Therory in graphic design is only at its beginning comparing to those other fields.
Sad to say but what influenced the most graphic design might be architecture and art...
