learn the basics
make your own projects (don't matter how bad they are as long as you get better)
look for tutorials only for specific things.

Quite honestly the official Adobe book is not that bad. I took a class for After Effects and the teacher just had us do the book for the semester. I learned a lot considering I missed a lot of days and assignments. Also just watch a bunch of tutorials of projects that interest you.
