for example a few weeks you tell yourself you gonna train biceps but hit triceps
but you will adapt to that so instead of telling yourself biceps and doing triceps you need to do chest or smth

It is weird that sometimes if I was supposed to workout a particular muscle, and I didn't get to the gym that day, the next say that muscle will feel somewhat sore

What about training til failure when trying to aggressively increase weights (but youd still not go past 5 reps)? so if I only got 4 reps id still increase weight for the next session effectively making it training til failure. Im only doing this for one lift per day

I have had just as good results switching exercises every workout but keeping a similar format. At least 2 compound lifts per session. Do calves instead of upper part of legs more often.
And abs first.

Bloody hell, at least make up a routine that suits what you're after and see how it lines up with other established routines. It's not that much work.
