Sumo is great for beginners to build leg strength to progress into conventionals in conjunction with RDLS.

If you're just learning, get a crock pot. Throw in pork/beef/chicken, potatoes, carrots, onions, celery, garlic, and whatever spices or sauces you think would sound good. Crock pots are amazing for getting started in cooking.

Imo 5/3/1 should only be used a progression scheme and not as an actual program. i.e pick a program you like, and instead of doing the "3x5 squats" it tells you to do, you replace it with 5/3/1. At least that's what I'm doing at the moment and it's working pretty well.

I say this because doing each big lift once a week

If you're wanting more PL specific accessories, I would do Paused Deads, Paused Squats, Front Squats, and Closegrip Bench. But as long as you stick to the basic 5/3/1 setup you'll do fine.
