So I've been wondering. I hit my macros and calories every day through chicken, rice, oatmeal, eggs and other good stuff. However, I rarely eat "greens". Does eating vegetables even matter besides fiber? I get my vitamins through a multivitamin supplement too.

Yes but not just fibres. Greens also contain lots of minerals and vitamins which you need badly. Supplementing yourself with a multi vitamin is good, but not all of it is absorbed. That's why you should eats vegetables as well.
Besides, greens can be really tasty.

I haven't eaten a green (leafy and cauliflower type vegetables) in over 30 years.
My bloodwork is perfect, I have zero health issues and I'm pretty fit. In way, way better shape and health than 99% of the people my age.
Just make sure you get all your nutrients from other sources and you're good.

For gains/body goals probably not drastically, but if you want to feel better and live longer you should eat more fruits and vegetables
