Should I be worried from cholesterol and saturated fats from eggs if I'm bulking on them?

Breakfast = Fruit and Fibre with Skimmed Milk
Dinner = Chicken breast with sweet potato mash and assorted vegetables
Tea = Ham salad sandwich

later may put an avocado in a blender with macadamia nuts, sprouted almonds, sprouted pumpkin seeds and some liquid stevia and powdered ginger... water

last night steamed broccoli tops, Brussels sprouts, yellow onion, habenero pepper , red cabbage drizzled with coconut oil and a tablepsoon of three year aged barley Miso, sprinkled with un-hulled raw sesame seeds

East some variations of these 4 meals per day with some more, sometimes substituting an oatmeal meal for junk or something easy.

Oatmeal Meal 1:
1 Cup Oatmeal
1/4 Cup Raisins
1/4 Cup Cashews
1 Clove Garlic + Cinnamon

Oatmeal meal 2:
1 Cup Oatmeal
1/4 Cup Canned Pumpkin
1 Banana chopped
1/3 Cup Sunflower Seeds
Cinnamon

I don't make normal oatmeal, I make sour oatmeal. I don't think a lot of people know about it. You could compare it to sourdough bread. Tastes far better imho. To make it, you add 1 part oatmeal to 1 part water then add like a tbsp of apple cider vinegar. Put it in a cover contained over night to soak. Then you add the other part water you normally would and cook.

2/3 Cup White Rice
1 Bagged of mixed vegetables
2 Poached eggs
1 TBSP Olive Oil + Apple cider vinegar + Lemon Pepper

Salmon Salad
Greens - Spinach and/or Cruciferous Leaves
1/4 Cup Cheddar Cheese (Replace periodically with liver patte, especially if training hard)
Dried Apricots 6 Pieces
1 Banana
Balsamic Vinegar

Sometimes I'll replace a meal with these food bar things I get at the grocery store. I'll usually have a protein shake, and after training I'll have juice or somekind of carbs. I make sure to get red meat in a couple times a week.
