Calories in, calories out is pretty much a meme. It's a good rule of thumb, but the real big player is the BMR (Basal Metabolic Rate). The BMR is dependant upon
- genetics (yes, your heard me: genetics)
- physical activity
- meal rates & calories in them
The body is cynically lazy. If you "educated" your body for years to ingest 6k cal/day, it will expect such amount every day. To body needs to waste 10% of your caloric intake to break foods down to calories. Actually, the body uses ~25% of the daily cals to break down proteins, ~7% to break down cals, ~3% to break down fats. It should be noted that whole, unrefined food takes ~50% more energy to digest, one more reason why calories aren't all created equal.
So, the body will "expect" to use 600 cals each day, and it's ready to use them even if you fast for one day or two. If a fatty, or an athlete, skip his meals even for a prolonged period of time, the body "keeps itself ready" for a 6k meal and in the meanwhile slows down BMR to cope with the sudden deficit (ex multis: http://www.jissn.com/content/11/1/7 ). As soon as the meal arrives, it's digested in toto.
On the other side, if the body "expects" 2k, it allots 200cal for digestion and regulate BMR accordingly. If a 6k meal arrives, only 2k are readily digested, with the exception of mere lipids (it takes little to zero energy to absorb them). If the remaining 4k is, for example, proteins, it's likely discarded.
You need time to "tune" the BMR. It's not a case that mere short dieting won't help in the obese population; they have to start exercising as well to make the BMR change appreciably fast.

It will take a while to cut; the body will try to lower the BMR before attacking its fat storage. Forcing the body to use more energy to break down food (e.g. switching from a fat-rich diet to a whole-grain & protein-rich diet) could force the body to invest all the energy allotted it expects to waste for the meals; this could prevent a slow down in BMR. Obviously increased physical activity speeds up the process
TL;DR replace fats with proteins

Starch can't be absorbed as it is, so the body has to produce enzymes to break it down into glucose. Production of enzymes takes energy. Dunno if it's anywhere near what the other dude claims though.
This slow destruction of starch into glucose is also the reason you don't get a massive insulin spike when you eat starchy foods.

It is possibile that part of what she eats doesnt get absorbed for the simple fact that, after being digested, food moves through the intestine and if there is physically too much stuff, some of it wont get in contact with the intestinal villi (which absorb digested food) before leaving the intestine, hence part of the food will not get absorbed and generate no calories.
...or she just sticks 2 fingers in her throat after binging everyday
