I dont count my macros anymore, but this is roughly how i eat through out the day on my maintance.
My rice and chicken i eat as two portions so 250 kcal each time.
But if i need to gain i'd throw in a banana or two with some peanutbutter and some almonds.

In the beginning i had a rough time reaching 2000 kcal as well.

If I reach 2200 cal/day (135 g proteons/day, currently maintaining) as a vegan, eating organic and wholegrain only,

100g Rice, 200g chicken and some veggies and a piece of fruit
= over 600 calories

>Postworkout
Shake made with protein, 500ml milk, banana, oats, frozen berries, peanut butter, cinnamon
= over 800 calories

That's over 2000 already in just 2 average meals + 1 shake, with plenty of protein and you still have dinner and preworkout if you are not cutting, if not you can easily eat another 1000 cals with those 2 extra meals, and that's not even bulking.

Here's what I have for breakfast

2 large eggs, 160 calories
4 TBSP of peanut butter, ~400 calories
Full cup of oats with dried fruit and honey, ~475 calories

So that's about 1,000 calories in one meal anon. Throw in some meat, a protein shake, or milk with that and you'll easily hit 1200 or more. Then just do something similar for your other meals.

I eat a lot of oats, peanut butter/nuts, fruit, sweet potatoes, eggs, and of course meat. Can't go wrong with that stuff.
