Which one should I start watching, /co/?
Adventure Time or Steven Universe?

they both are cool. Adventure time starts slow tho, but is the deeper cartoon.
Adventure Time starts great but it becomes pretentious and boring from the fifth season. S7 is a bit better but there are lots of issue still (like the plot development feeling more like "throwing shit at wall and see what sticks" rather than a well-planned development).
SU has better plot and character development but I don't find the humor that fun.

Depends on what you're looking for.
Adventure Time is a lot more silly and comedic. It's more experimental but as a result tends to be more hit & miss.
SU is more consistent. It's not really a comedy, more of a fantasy slice-of-life with a lot of cute and dramatic moments. Both are mostly episodic, but SU is more focused with it's storyline.

Watch the first 2-3 seasons of AT. They're absolutely great.
Check out SU if you want, but know that it starts out really slow.
SU took until season 2 to actually be good, while AT sort of got worse as seasons progressed
