It was a pointless cop out given the already wacky setting the audience was exposed to over two movies, but personally I let it slide because scientifically something the size and destructive nature of Galactus would probably be gathering a nebula as it passed through galaxies and destroyed celestial bodies to sustain itself.

Galactus' ship is often described as being surrounded by dust clouds. It has its own non-negligible gravity, it's not really unreasonable that there might be a giant purple dude in the middle of all that.
He's not even supposed to be city-sized.

Part cloud, part humanoid, registers as a character but still clearly alien and held together by power cosmic.
