There was a bit in The Incredible Hulk: Ultimate Destruction where it was mentioned that women responded better to mutation-inducing gamma rays than men.
Dunno if the same is true in the comics.

They generally keep exact ages vague, which makes sense considering the timeline in comics is generally "don't think about it". Most Marvel heroes are portrayed late 20's/early 30's (Spider-Man, Cyclops, etc.) that have been there since the beginning. Younger heroes tend to stay young unless they have a reason to age them. It's not consistent across all characters, one may age a few years and others may remain young, etc.
A character "getting younger" causes all sorts of problems with this. Mockingbird was introduced as a character in 1971. She's been a member of several Avengers teams. She's died and come back. She has a long history. So what exactly of her backstory still is there if she's suddenly younger?
Hellcat is worse as they threw away even more of her history. And for what purpose? It doesn't make a better character to clean their slate, it just makes things confusing.
