He's made some dumb decisions that he really shouldn't have (Frost and Fire, Too Old, and Red Throne were all him being a bigger fucking idiot asshole than he probably would have been in terms of his true character) and other times some of the best potential plotlines for him got fucked up by the show (his arm and his dad).
But at the same time he's made a lot of growth over the years. Got smarter and wiser without losing any of his capacity for kindness and desire to do good. He had a period where he seemed to be falling out of his old heroic graces but was able to climb back from it and emerge stronger and better off. Season 7 really does seem to be about Finn finally getting good compensation for all the shit the show had him wade through when he was at his worst.
Finn's pretty good but I think he could have been way better. Guess that's a problem when there's like 30 writers throwing him this way and that.

See I thought the same too, but in season 7 it seems like the writers finally realized "oh shit we still write Finn like a retard" and they've mostly been handling him pretty well. Aside from Stakes which handled him just atrociously he's been consistently pretty smart and shit, and not just in a philosophical naval gazing way.
Of course he should have been at this level like 2 years ago so they don't gain that many points there, but I think it still bears mentioning.

Gravity Falls started with some pretty lofty goals and stumbled, apparently because of behind the scenes shenanigans. It started with growing pains, the stupid boy crazy Mabel episodes and beta Dipper spills his spaghetti around Wendy episodes you mentioned.
I thought season 2A was the strongest part of the show and demonstrated what it was really capable of. After that, I can't know what went on behind the scenes, but it felt rushed and I do think the theories that it was cut short by a season are true and hurt the show.
Loud House has much humbler and easier to meet goals, and that's fine. Less chance of crashing and burning, although less chance for something amazing, too. That's how it goes.

When you manage to write something more boring than Butch Hartman then you know you've hit rock bottom. The animation or the designs are not bad but the setting, writing, humor is just so damn mediocre; it's just "le quirky characters doing quirky things":The show, with every character being a walking trope: the sporty tomboy, the prom queen wannabe diva, the rocker girl, the nerd, the joker, the typical suburban teenager, the baby that is always about to suffer an accident, the emo/goth girl, the tomboy, the dumb blonde. The humor is just plain shit, literally "DUDE FARTS/SNOT/BURPING/SALIVA LMAO", they rely on scatological/gross out humor to try and squeeze a laugh out of kids who ,they pray, might be watching and cover up that there's really not much going on plot wise, and I don't mean as in "over arching plot" but just the episodic plot, "characters try to win the protagonist's favor to get something" boy that is one damn original idea, compare it with Gumball who has the same "episodic family comedy" yet it still has creative and original plots for almost every episode and with humor that is actually funny. They try and make the audience laugh at the character's interactions but they all fall flat simply because nobody cares for them. I feel like the mediocre writing is not so much fault of the staff themselves but more of the setting, like what else can you expect from such an uninspired premise as "harem anime minus the lewd", they literally took your average "boy lives in house full of girls" jap story and stripped it of the only reason people watch that crap in order to make it TV-PG; the fanbase is involuntarily reflects this, just browse the general and all you will see is people talking about their incest headcanon, which tells you how bad they wish this was an actual harem anime because there isn't anything else you could talk about the show.
It's just overall mediocre and very forgettable.

Eh, as poorly written and as grand a hyperbole as it was, I do have to agree with the giant wall of text as far as points that it makes. I'm 6 episodes in. The sisters all mostly exist for one schtick and become a drag, the jokes far too often go to toilet humor when they've exhausted all their sister schticks, and there's just not much creative there as far as episode plots go. They mostly just rely on the fact that they're doing all these bland plots with 8 "characters".
I get the occasional chuckle out of Luan surprisingly and Leni because dumb character are generally easy. Most of the sisters like Lucy, Lynn, and Lori just exist to drag their trope into the scene and Lisa, the twins, and Lily are just absolutely never funny. It's watchable like Bunnicula and I'll keep watching it because I need background noise while working on art, but I would never say the show excels.
