It was still an explanation for his skill as a pilot. He additionally fucking sucked at utilizing the force until he specifically received training and grew as a person, as we saw in the next two movies. It makes for an interesting character.
Rey goes from 0 to 100 in everything in everything she does. It makes for a boring, awful character.

The important difference between Rey and Luke is that Rey never suffered any losses or made any mistakes.
Luke had one big achievement in ANH. He was a good pilot but little else. Rey's a crack pilot, fighter, mechanic, and is so powerful with the force that she can straight-up mind control people way beyond what we've seen any Jedi do before.

When he fights him in TESB, which is years later, he gets his ass handed to him.
It's only after yet ANOTHER year or so of training does he defeat Vader, and even then it's him appealing to Vader's conscience that saves the day.

Vader obviously holds back against Luke the whole trilogy. He's theatrical and acts like a dissapointed dojo master; he gets a million chances to kill Luke but always opts for blunt force trauma or chopping of the hand - it's punitive, not combative.
That's why every scene with Luke and Vader is fucking electric, there's shitloads going on beneath the surface. It's more a conversation than a fight.
