Alternatively, it could be because Steven Universe is based on magical girl warrior tropes. It wouldn't be the first time a one-gendered species existed in fiction. It's not exactly illogical, either; we know Gems don't reproduce like humans, so why would they have sexes if they don't have sex?
Honestly, the alternative is weirder. Like Homestuck trolls, for example. Their reproduction process makes them binormative, but we don't know why they even have males and females in the first place, since it's irrelevant to reproduction. Or why females have breasts.
