The most underwhelming thing that could happen is Betty can't fix Simon, so she just chills or goes to the future. Or just somewhere else in general, never to be seen again.
The best but worst ending would be Betty being able to Fix Simon's crown and Betty reverts to normal. But then we're left with 2 normies.
It would be interesting to see what they might do with the couple though.
