my only issue with that game was the lack of recognizable foes, and that they repeated the superman theme way too much during the game, other than that it was a fairly decent arcade game for its time.

No. The general reason people give for not wanting to make Superman games is that he's too powerful and they wouldn't know how to balance him properly, or de-power him logically in order to limit what he is capable of doing in game. He would constantly need to be battling things with Kryptonite, under a red sun, or are super powered to his level.

As much as I'd love to give Superman a game that reinvigorated interest in him in the mainstream, I doubt he'll get anything, because the mainstream is saying:
