I think it's more that none of the main cast is fully fleshed out leaving a whole lotta room to be taken in any direction.
Positive side is that people CAN use them for interesting stories that deviate from canon in some way.

I have that problem with Red like Blood.
It's AU where Weiss is a vampire and Ruby is a vampire hunter, clichéd enough but with proper care could be interesting.
None of the kingdoms exist. Semblances and Aura aren't a thing, the only canon characters to make an appearance are Ruby, Weiss and Yang, and on top of everything there's a 5-10 year timeskip after the third chapter or so.
There's really nothing but names connecting it to RWBY.
It certainly doesn't help that the story itself has been very mediocre so far.

What I meant was the stories that follow the current storyline but add 1 change are duller than sin. It's FANFICTION, take the characters and create a new story with new interactions.

I realized I liked Technician because of the Signal setting but now that it's gone, I find it meh.
I found the reason to be that, even ignoring if you've grown exhausted from reliving them, Volume 1's basically Initiation->Jaunedice->Whatever was left.
Initiation is rarely changed. Even if you switch the team around, it always ends the same way. Giant Grimm fight. Basically to show off the combat skills or OP semblance,
Jaunedice is used to put Cardin in his place or whatever. Normally a time where the OC or SI stands up to him. Basically a part to show off how right/strong the character is.
And then there's the dance which most don't even get to.
Ugh, I just dislike retelling stories because by then it is up to the author's writing ability to carry the story. Which often falls short.

I loved reading it for it's comfy setting as I imagined everyone to be around 13 with Ruby 10~ish. Combine that with the wonderful Patch winter and was in love.
Then they suddenly grew up and the magic was gone and it looked like another boring retell with a different Jaune + his harem of childhood friends.
While I wasn't too fond of it, Silver was able to do just that by making an original plot and not really following the show which I liked.

At least V1 has a certain charm to it, and it introduces all of the characters.
V2 doesn't really move the plot anywhere at all and hardly anything interesting happens.

Volume 2 is where the prom happens so it literally cannot be the worst volume. Seeing Ruby, Blake, and Jaune in dresses bumps it up the tier list enough.

Literally none. At all. With the every so slight exception of Sunflower because the artist who focuses on it makes some really good work.
