I don't think she was retarded. Tiffany was a born follower, a sheep among sheeple. There's never a time where she isn't the last (aside from Sandi) to jump on board an idea. Of all the fashion club members, I can see Tiffany becoming an actual fashion model more than any of the rest.

A year or so after graduating, Quinn wants to have a little reunion of the fashion club members, Sandi spends the entire time lying about how she's a big shot already in her sorority (she really gets shit from most of the others) Tiffany talks a lot about all the guys she's dated, (but has been dumped by every one.) Stacy just talks about how much she likes school, but keeps getting recognized and hit on by guys, which starts making Sandi angry. After catching and talking to one of the guys Quinn discovers that he recognized Stacy from porn vids where she goes by the stage name Stacy Capri. Stacy admits to Quinn (alone) that she dropped out of school and is only doing the porn to make some quick money. Once she's got enough saved, she's going to pursue an acting career. When Quinn tries to dissuade her from making more porn, Stacy gets angry and tells Quinn that she finally is making her own decisions and doesn't need someone to second guess them.
Later, they all part ways with none of the others knowing the secrets they've been trying to keep, except Quinn knowing Stacy's. Quinn is concerned for her friend, but realizes that she can't really do anything about it. She parts from Stacy with am embrace and tells her to never give up on that dream of being an actress in the hopes that it will keep Stacy from stumbling on the path to fame.

every other episode also ended with alternative selves so I think the last movie had a more realistic version. Stacy grew into her own and found something she really likes that has no fashion in it and Sandi found a way to control a new group of ladies. I could see Jane doing TV because she's as jaded as Daria but has shown several times to roll with the punches and see where things take her, maybe Daria became more confident as well
