That's not what they've ALWAYS been. There's been quite a few runs that didn't take him into that direction. Hell, Simonson didn't really write him that way most of the time and Simonson is the definitive Thor writer.
You're right in that he is written that way in quite a few runs, but I don't know if I'd say that's his definitive characterization when, again, it isn't really what Simonson did and Simonson's Thor is the gold standard.

As someone who has never read Thor, and only really started to like him in the MCU, I found MCU Odin to be an utter douche. Hopkins really sold it. If he is half the asshole in the comics, I'm torn between my hatred of modern feminism and SJWs and Odin.
I'm wanted to see him get ground to dust for a while. I couldn't smile wider at the end of Dark World, that alone made the film okay in my book. Sadly, it sounds like he will be back in Ragnarok and likely retaking his throne. Hopefully Thanos will thrash him in Infinity War.

Thor starts with Donald Blake, a doctor with a messed up leg, finding a stick that when hit against the ground, turns him into Thor and lets him fight rock aliens.
Then he gets an ongoing where it's eventually revealed that Donald Blake was created by Odin to teach him humility. The Donald Blake identity continues until Simonson;s run starts in the 80s, where, after Beta Ray Bill manages to steal Mjolnir, Odin unmakes Donald Blake because Mjolnir used to turn Thor back into Blake if he stopped holding it for a minute.
Thor starts using Sigurd Jarllson as an alias, until architect Eric Masterson merges with Thor when Thor's soul gets separated from his body for magic reasons.
Thor eventually comes back, Masterson becomes Thunderstrike and dies a heroic death, Thor dies in Onlsaught.
After Onslaught, Thor gets killed by the Destroyer, and gets merged with Jake Olsen for the entire run of Thor v2. Then Loki destroys Asgard, Thor REALLY destroys Asgard, and Thor eventually comes back when Donald Blake starts existing again.
Also, at some point Thor was Siegmund AND Siegfried in the Middle Ages.

The consciousnesses were completely separated during the Fraction run. Some monsters that live/feed off dreams as well as Enchantress messing around with Donald Blake. I can't explain it too well, but in Fraction's reasoning, Gods were stories/dreams/explanations/quantum observations. And Thor and Blake kinda "outgrew" one another over time and became their own people. But Blake couldn't get over not being Thor, or rather, that Thor didn't need him, so he sought enchantress for help/power and she betrayed him. Now Blake lives in his own dream world.

I don't remember that at all about Lee/Kirby's Odin. He wasn't down for Thor marrying Jane but that was it. The "Odin is a jerk" is a completely Fraction thing. JMS spent 2 issues showing Odin and Thor coming to terms with Odin passing on rulership, explaining where Odin felt he went wrong with the treatment of his own father (Bor) the two reached an understanding as kings and father/son and Fraction just ignored it.

There are no all-mothers. In terms of in Freya... in books that are in print, prior to Fraction, there are only a handful of panels that even show her.
If you want to see Odin v Jane, just read the what if. Odin initially has problems with Jane for many of the same reasons that Aaron presents but then he sees her nobility, turns her into a goddess and marries her. Its actually a fun little issue.
Old Thor stuff, even going back to Kirby and Lee stuff, is really good. I was surprised. And I must admit... as much as it pains me to do so... Thor has always been an inconsistent jobber. I used to think it was modern marvel. But he was inconsistent even during the Sainted Simonson run.
