Shake shack. Maybe it's a meme but the chicken sandwich was the best I've ever had.

Bacchanal was the shit. My buddies grandfather has a huge gambling problem and has their top tier gambling card. Fortunately my friend has the same name as his grandfather. We used his card and cut the long ass line and got free booze while we ate.

Pan e Vino's by the airport is a great dinner atmosphere with good Italian food, but not as expensive as stuff on the strip.

Andiamo's Italian Steakhouse, Carson Kitchen, Capital Grille, and Picasso are all great choices in Vegas. I also think Gordon Ramsay has a restaurant in Vegas, which i would definitely check out.

Get away from the strip for the most part. Unless you got crazy money to blow at the really nice, really high end places, you're paying way too much for an average at best meal. Chinatown (Spring Mountain Road, west of the Strip) is full of really good food at a variety of price points, with a lot of places open until like 4 am on the weekends.
If you're relegated to the Strip, try to avoid most "TV celebrity chef" places, because most are garbage and overpriced trying to get them Midwest tourist dollars. Will say almost anything Emeril does is fantastic, and the more prestigious "celebrity but not often on TV chef" places are worthwhile (but again, pricey as hell).
Don't make it a point to eat at any "cafe" at a casino because odds are you can have a more unique meal in the same area for roughly the same price. Mandalay Bay has some hidden gems I'm rather fond of, and any casino with a mall will have additional restaurants in the shopping area.
If you're really broke, UNLV isn't too far from the Strip, and you get a lot of easy, alright food around there because broke college kids

To be quite fair, there is a lot of really good food in the city, but you either have to get away from touristy places or be willing to pay top dollar. Don't know if I'd say restaurant capital of the world, but definitely not the "buffet and shitty chains and celebrity chef" wasteland a lot of people think it is
