It's Winter here and it's cold as fuck.

Time to stay in, turn the heater up and indulge in some comfort food.

What are your usual go-to comfort foods?

Chicken Parmigiana, Lamb shanks and mash, Chocolate Brownies, Cheesy Potato Skins with Guacamole, Sticky Date Pudding and Cheeseburgers my winter staples.

Coq au vin with quality wine. Of course, we're being sensible here and going with fast recipe that takes about 3-4 hours instead of 8-12 original asks for. Simple dish when you get down to it and nothing to be intimated by.
>>
>>7823825
It used to take fucking forever because old French housewives made it on a hearth that only maintained low heat to save wood AND they used old roosters instead of modern chicken people use today.

I love slow dishes in Winter.

Cold, wet and windy day outside with the heater going, cup of tea in my hand and something sweet, movie on and the delicious aromas filling the house.

Maximum comfy.
>>
>>7824338
Ahaha good bantz m8
>>
>>7826250
>Maximum comfy
This. Nothing is more comfy than being inside on a cold night, listening to the rain coming down outside, while there's music or a movie playing and something braising in the oven. Bonus comfy- homemade bread.

>>7823589
>go-to comfort foods
Macaroni & cheese, beef stew with dumplings, cheeseburgers, bolognese, cider braised pork cheeks, self-saucing chocolate pudding, and cioppino. There's a ton of others I like- where I live we get about three months of gorgeous summer and then nine months of rain- but those are the ones that jump to mind for me. As well as, of course, the aforementioned bread. Can't go wrong with that.

Also,
>Sticky date pudding
Fuck it's been so long since I made that... I think I'll have to do that this 'weekend' (in the industry so my weekend is Thursday).

Any of my grandma's cooking.

got myself a slowcooker a few months ago. its been getting heavy use this winter.
I mostly like just making random stew. Just what ever meat and vegies are on hand with a bunch of spices and herbs.

It's different each time but always good.
>>
>>7823589
My two favorite comfort foods at this time (it changes) are
> beef shanks braised in red wine (with tomato puree, thyme, onions, garlic, bay leaf, and salt and pepper) served over mashed potatoes, with some braised red cabbage or asparagus on the side
and
>shrimp/crab/crawfish/lobster etouffee with dirty rice

Those meals just make me happy.

recipe please...
>>
>>7832779
There's recipe for lamb shanks all over the net. Usually just browned shanks, stock, onions, crushed tomatoes, tomato paste, garlic, carrot and red wine. Shove it in a slow cooker or covered tray in an oven on low heat and then leave it and forget about it for hours with the occasional check up.
>>
I'm in Melbourne and it's going to be cold as fuck this weekend.

Gonna stay in every day and make lamb shanks, brownies and cookies and pulled pork burgers.

Would there be a way to incorporate balsamico di modena in that or is that overkill, because i have everything else by chance (except shanks).

Would the balsamic overpower everything? I have a bottle and feel stuck with it.

Wouldn't have a clue senpai. Never tried it and I suppose it depends on the balsamic variant and how much is used. Only one way to find out I guess but would be a shame to ruin some nice shanks.

Braising bby!
Lamb shanks, beef cheek, beef spare rib, pork chops in white wine and apple.

Best braising liquor imo is:
Beef stock
guinness
brown sugar
smoked bacon
thyme
rosemary
some type of vinegar
dijon mustard
mire poix

Fucking hell. I can smell it now. I'll try it for the next time I make a beef pot roast. Thank you, Anon.
>>
>>7838413

It's basically like a Schnitzel but prepared with beef instead of veal. It originated with German immigrants in the US.

Take a cheap beef steak and pound it out with a meat hammer so it's tender and thin. Then standard breading (flour, egg wash, breadcrumbs). Shallow fry it until it's crispy.

It's commonly served with "country gravy" aka "sawmill gravy", which is really just bechamel with a lot of black pepper in it.

Oatmeal.
>>
Comfort food...It's gotta be a big bowl of home made chicken corn chowder, or mac and cheese like mum used to make. And banana cake with walnuts.
>>
>>7843962

Because the long cooking time allows the tough rooster's connective tissue to break into glycerin. And white wine would not stand up to that.

Of course coq au vin should be made with an old bird, and usually isn't. So the extra cooking time is a waste.
>>
>>7844008
hence why you would be using white win.
>>
>>7844014

In which case you're unlikely to use a full mirepoix, etc. There's many ways to use chicken, might was well complain that cooking with wine in any way is a meme, and all chicken should be fried.
>>
>>7839325
to the eggwash you could add finely chopped parsley and garlic,a little bit of mustard and paprika in my country we call them marinera
