How long does kimchi last?

I know it's fermented, but does it ever expire?

I've had a sealed package of kimchi (homemade) in my fridge for about 6 months, is it good still?

Open it and find out, your fridge is right fucking there.

but kimchi is already technically "bad"

How do you know if something that already kinda smells and looks like shit is bad?
>>
>>7820692
YES. it's a preserve. depending on your taste you will want to keep it in your fridge for 2-3 months before eating it anyway (assuming it is made fresh)

You won't know until you've tried it.

If it tastes sour, toss it.

If it's fizzy, toss it.

It's a controlled rot, but there's plenty of microorganisms that can survive the fermentation byproducts, that will make you sick as fuck.

kimchi related can I use the little red european radishes instead of the big radishes

>sauerkraut is technically "bad"
>beer is technically "bad"
>cheese is technically "bad"
>chocolate is technically "bad"

The moral here is never eat any food, ever.

Does it still smell and taste like kimchi?
>>
>>7820923
completely wrong, the only sign for kimchi gone bad is mold or off-smell.
it gets more sour with time, i personally wouldnt even use it for things like jiggae or fried rice before 6-9 months in the fridge.
If it tastes like a more sour version of kimchi you know, its fine

The people who have been faggots about answering you are right despite being unnecessarily salty. It should be quite apparent when you open it up if it isn't good to eat, man. It's probably fine though.
>>

Fuckin A, bro, kimchi just gets better the stronger the funk gets. I know some people prefer it fresher but not me.
>>
>>7820692
If you're worried you should probably just toss it dude, unless you don't have any other food in the house.
>>

This answer absolutely reeks of no-idea-what-you're-talking-about, mate. One wonders why you even replied at all.
>>

>imma buy this shit that traditionally sat in the ground for a decade
>If it sits in my fridge, in a sealed container with controlled temps and sealed for a few months I better toss it just in case

Dont ever talk to me or my fermentation again.
>>

It should be in definitely basically as long as its stoned in the fridge.

It will get more and more sour with time. It will become nasty before it becomes toxic. Don't worry about it.
