Proteins are best digested in an acidic environment and carbs and starches are best digested in a basic environment, so if you eat both at the same time your body doesn't know how to cope and your food doesn't digest properly. It's best to separate the meat/eggs/dairy and veg portions of your meals and have them 2-3 hours apart.
