They're nice sautéed in garlic compound butter, removed from the pan, the pan deglazed with a bit of white wine and finished off with lots of chopped parsley and poured over the fish.
Serve the whole thing over some polenta/grits and that's some good eatin'.

Speaking with some chef's who've had more experience with it than I, they say it's more about the texture and numbing effect it has on the lips and tongue. It is fatty and is comparable to the fatty belly of yellowtail. Flavor wise it isn't better than any other sashimi, it is more ordered for the experience than for the flavor.

Botete is super popular in Mexico. It is not as toxic as the Japanese fugu though. So long as you don't et the entrials or skin you are fine. Its fine firm white meat.
