Tell me a reason of how coconut milk is an useful to cooking/important to someone's diet.

Hard mode: No mention of cocktails (Pina Colada etc)

Coconut milk is essential to many asian and pacific islander dishes, especially curries and certain soups and sauces. And it's great for baking.
Plus, it's delicious. People who don't like coconut aren't my kind of people.

The coconut you're thinking of for cocktails isn't regular coconut milk, though. It's coconut cream, usually sweetened (sometimes not).
Coconut MILK is for cooking and baking.

As far as nutrition goes, one cup of coconut milk contains about 6.7 mg vitamin C, 0.4 mg vitamin E, 0.2 mcg vitamin K, 1.8 mg niacin, 38.4 mcg folate, 0.1 mg vitamin B6 and 0.1 mg thiamine. The same amount of coconut milk can give about 38.4 mg calcium, 3.8 mg iron, 88.8 mg magnesium, 631 mg potassium, 240 mg phosphorus, 1.6 mg zinc, 2.2 mg manganese, 0.6 mg copper and 14.9 mcg selenium.
So, it's great for getting your potassium, magnesium, selenium, folate, and even some calcium. Not too shabby. It is high in fat, though, so consume in moderation.

I've always used unsweetened cream in cooking and milk in cocktails. Cream is too thick for any cocktail I make.

Solid addition to coffee.

As long as you like coconut, coconut milk is a fantastic dairy replacement in terms of function. No idea about the nutritional aspect.

It's essential for a lot of Thai dishes. Plus it's tasty.

it's a staple in a lot of caribbean dishes, mainly used in stuff like rice and beans, curries, etc. adds a nice flavor that's not very overpowering, although certainly you could substitute it for something else if you really wanted, personally though I think that it's great to include in the right dishes.
