I have a bunch of vegatables and some vegetable stock.
I know to make soup I fry the veg for 2-3 mins then simmer in the vegetable stock for 15-20 mins before blending it.
I don't have a blender, however, so what can I do to make something somewhat edible? Would simply mashing it whilst cooking it provide some level of soupiness or could I deviate and make something else?
Any suggestions please welcome.
Strain out some of the veg and mash it with a fork, or add some cornstarch to thicken the broth and settle for a stew-type thing.

I know but I'm pretty poor and only have several vegetables in the cupboard, so I was just thinking something simple and something that would last a few days.
I'll definitely leave some chunks in, it's just I was a bit worried about getting the vegetable flavour mixed in with the stock with a degree of thickness about it without a blender.
Look into making a basic minestrone soup, chop up veg, add some bacon, red kidney beans, pasta, tinned tomatoes etc
It doesn't need to be blended. Plenty of other soups dont been blending either.
Not all soup needs to be blended. Dice your vegetables and leave them whole. I can post a few examples if you want?
