grilled my first steak today i followed all the instructions

grilled my first steak today

i followed all the instructions 100%
1. bought myself a piece of 1 inch thick new york strip with some marbling
2. oil up the grill, heat it to 500 degrees F
3. put salt and oil on steaks
4. grill 5 min each side
5. let it rest for 5 min, put on black pepper

wasn't impressed with the taste. although it was perfectly medium with grill marks, it was hard, difficult to chew, not much beef flavor. just like a salty piece of soft rubber.

what did i do wrong?

salt and pepper alone will be pretty bland, next time add butter to a frying pan towards the end of it cooking and baste it with it

some garlic in the pan won't hurt either, rosemary etc

you cooked it past med rare

Here how you do

1 wagyu steak
2 duck fat in pan
3 start oven for 320
4 medium low heat for pan put duck grease
5 wait till fat melt then put steak in pan
6 3 min each side
7 put in oven for 5 to 7 min depends on your preference
8 take it out from the oven
9 put steak in foil
10 put wine in pan at low heat
11 let it reduce till it a sauce
12 combine steak and sauce
13 bon appétit

That's 11-13 minutes of direct cooking. No wonder you need wagyu.

Sounds over done to me, you could repeat the steps with a thicker steak and have it good
but I also do not like new york strip as much

All the things the other anon said, plus you get to make a nice pan sauce while the steak is resting. Impractical for large gatherings though.

I put this on the grill after lighting it. After 30 minutes when the coals are nice and ready, the pan will be hot enough to cook 8-10 rib eyes on both sides without any loss in temp. It's my secret to get a super thick crust w/ just 30 seconds per side.

You could do the same on a 6 or 4-slot stove though

Here's my technique that I've perfected.
>get a decent cut of steak (NY Strip or Ribeye)
>heat oven to 250F
>put in oven for 20 minutes
>take out of oven and put on hot skillet
>sear both sides then add butter, garlic and rosemary
>WA LA
Comes out amazing every time.
