Smoked a chicken tonight with some mesquite and apple wood.
Tried smoking it without the skin to get more flavor in the meat and it worked well.

That's basically what I'm doing, yeah. I have a pretty decent fan so it doesn't get too smoky, and if it does, I open the balcony door.
I actually have a pretty good Hamilton Beach indoor grill. I like it because it actually has a lid you can close for convection, and you can adjust the heat, unlike most other indoor grills.

I agree about sausages but onion in patties is a thing and can taste good.
It stemmed from the great depression diners started putting onion in patties to make the beef last longer in shortages. It stuck around.
The only grill I use is my George Foreman and I got rid of it when I moved.
