I really love uni (sea urchin). Salmon skin handrolls are really great. And saba is a good one. I'm also a sucker for the big fat saucy rolls too though. Bonus points if it's got cilantro with it.

It's very tasty, though I think a lot of it can be accounted for by the sauce. It's basically sake and mirin (and some soy?), that has been reduced for hours, making a ridiculous syrup.

True. It's also very expensive, unfortunately. One of these days I'd like to get an unagi-don, but I think they were like $20 at my local restaurant. Really delicious though.

Sometimes you can find it at Asian markets, so cooking it at home might be a good way to go

Anything simple. I really dont like american style sushi rolls covered in sauce and toppings.

Nigiri is my favorite, followed by traditional Maki rolls.

Pic is from Sushi Dai in the Tsukiji fish market in Tokyo. Went in April.

Usually all you can eat is either quite expensive or of lower quality. My most local all you can eat is cheap as heck, but it's also not very good. There's one a little further out, and it's like $30 for a meal. So it's great if you're that hungry. But usually I'm not trying to gorge that hard anyway. I can get a big roll, a handroll, and some rice and soup for like $16, and thats plenty for me.

My go to is always a salmon avocado because the quality of salmon says a lot about a place since it's so popular. I'll also usually do one of their specialty rolls or if all their specialty rolls sound like they'd suck I'll get a dragon roll (tempura shrimp, cucumber inside topped with Unagi and avocado)

favorite is salmon nigiri. Place by me in Golden, CO called Maki sushi makes a killer mango roll. grew up in San Diego and this Maki place from outta left field is the best sushi I've ever had
